MUSHROOM AND SPINACH GRAVY OVER BROWN RICE
1 cup mushrooms
1 cup water
1 cup almond milk
¼ cup flour (I used GF)
1 tbsp olive oil
1 tsp black pepper
1 tsp vegetable bouillon
2 large handfuls of spinachIn a skillet over medium heat, begin by sautéing mushrooms in olive oil. Once mushrooms begin to lightly brown add water and bullion. Stir water and bullion until fully dissolved. Add black pepper and almond milk. Next, sift in flour (it’s very important that you sift the flour to avoid large chunks forming). Reduce heat and let cook over low heat for a few minutes to give sauce a chance to thicken. Turn off heat and add in spinach. The hot sauce will quickly wilt the spinach. Serve over hot brown rice.
